Catfish with vegetables in soy sauce

You can prepare an interesting dish from catfish steaks in soy sauce. Meanwhile, for the fish to be truly successful, the following two points should be taken into account:

  2. It is advisable to salt and sprinkle the catfish with lemon at the very beginning of cooking. This will preserve the structure of the fish and provide an attractive appearance to the dish.

At the very beginning of cooking the fish, you should preheat the oven to 200 degrees. Then cut the vegetables (green onions, carrots and peppers) into thin strips, about 5 cm long. Salt and pepper the steaks (4 pieces), place in a small form. Next, you need to distribute the vegetable mixture over the fish pieces and pour soy sauce (½ cup) over the catfish. Bake the steaks in the oven for 30 minutes, basting them with sauce occasionally. It is important not to overdo it with salt, which is already present enough in soy sauce.

Serve catfish prepared according to this recipe with rice or Chinese noodles.

Fish is a product that is in demand on almost any family table. We can talk endlessly about its benefits for the human body, but everyone’s taste is different.

Sea fish has undeniable advantages. It contains more iodine and fewer bones. Catfish is one of the varieties of sea and ocean fish that lives in northern waters. It can reach one and a half meters in length and weigh more than 30 kilograms.

But, despite its impressive size and predatory nature, the meat of this fish is very tender, nutritious and slightly sweet in taste. In addition, the fish has some peculiarities in preparation.

Features of catfish meat

In addition to the fact that the flesh of this fish is quite oily, it is also slightly watery. At the same time, there are no carbohydrates in the composition, and the ratio of proteins and fats (4:1) is ideal for eating catfish for dinner or lunch.

Due to the fact that catfish meat is quite loose and difficult to prepare, many housewives are afraid to handle it. Because it's watery and greasy, it can fall apart in the pan or turn to mush in the water.

But experienced chefs have their own secrets on how to avoid this. Typically, batter is used for frying, and rather salty water is used for boiling. All this will help seal the top layer of pulp, and it will not fall apart later.

Where to buy catfish

This type of fish is usually sold in large supermarkets or specialized fish stores in frozen, smoked or fresh form. You can find both small carcasses and quite large ones, pre-cut into steaks. If you are preparing catfish for the first time, it is better to give preference to smaller carcasses; they will be less hassle.

Prices for catfish are not too cheap, however, the demand for this type of fish is constantly growing due to the versatility of preparation and excellent taste.

What is made from catfish?

The fish is quite versatile. Its taste qualities allow you to prepare a wide variety of dishes for every taste and color.

Adherents of proper nutrition are better off giving preference to baked or steamed fish, since fried fish absorbs quite a lot of oil, which turns healthy fish into a terribly high-calorie dish.

Catfish is also good for preparing various first courses. The broths are rich and very aromatic.

Fish goes well with a variety of cereals and vegetables, but what suits it best is potatoes, tomatoes, cheese, broccoli, rice and millet.

Fried catfish

It would seem that this is the easiest dish to prepare, but in fact it is very tricky and is fraught with a lot of unpleasant surprises. Incorrect preparation and low frying temperature will instantly ruin a beautiful steak, turning it into a porridge-like substance. Therefore, use proven tips:

  1. When using frozen fish, defrost it completely before cooking, this will eliminate the presence of additional moisture, which can cause the loose meat to disintegrate.
  2. Before frying, salt the fish not in the usual way, just by sprinkling it with salt, but use a brine solution. This will help the fish to salt faster and better and subsequently retain its shape when frying. Prepare the solution in this way: take one and a half tablespoons of salt for 1 glass of water. Keep the fish in this brine for 20-30 minutes.
  3. A thick batter will help maintain its shape and keep the fish juicy. It can be made from dough, a thick layer of flour or breadcrumbs. The main thing is that it seals the fish quite tightly.
  4. Before frying, the pan must be as hot as possible, but the use of oil is questionable. The opinions of housewives on this issue differed. Some advise frying fish in a huge amount of oil, making a kind of deep frying, others do without it at all (of course, this is only possible in a good non-stick frying pan). Try both methods and choose the one that suits you best.

Fried catfish is served with a vegetable salad or a side dish of rice or potatoes.

How to cook catfish correctly

Before boiling, the catfish is also completely defrosted and kept in brine. The boiling itself can be done in two ways: in a pan or steamed. What you will need for this:

  • If fish is needed for the first course, it is dipped in ice water and placed on low heat. The yushka should not boil strongly, but gurgle slightly.
  • To boil fish for other dishes, place it in boiling water. Cooking time depends on the size of the fish. Usually this is no more than 6-10 minutes after boiling.
  • Steamed fish takes a little longer to cook (about 20 minutes), but the steam will retain more nutrients than a pan of water.
  • When boiled, fish emits a rather specific smell. To eliminate it, use herbs or regular dill and lemon.
  • Cool fish meat that will be used in salads on a thick layer of paper towels before slicing. This is necessary to get rid of excess liquid.

Boiled catfish is a good solution for a healthy dinner and a great idea for a fish salad.

Bake delicious fish

Baked catfish is one of the easiest dishes to prepare and at the same time very healthy. Here's a basic catfish recipe that can be customized using a variety of spices, herbs, and vegetables:

  • place the defrosted and soaked steak on foil and a bed of your favorite vegetables;
  • sprinkle with olive or any vegetable oil;
  • If desired, you can sprinkle with cheese;
  • cover with a second layer of foil;
  • Place in an oven preheated to 180 degrees and bake for 20-25 minutes.

The process of boiling such steaks is quite simple and takes about 10 minutes if a pan is used, 20 minutes when steamed. It is a little more difficult to properly prepare fish for thermal exposure. Namely, this stage mainly affects the quality of the final result.

Features of working with catfish steak

Catfish is a tasty and healthy fish, but only if you know how to handle it correctly. Before placing the steak in a container of water, consider the following points:

  • If you do not soak the product first, during the cooking process it will literally fall apart into fibers or larger pieces. For this reason, the component is first kept in a saline solution (3 tablespoons of salt per 1 liter of water) for at least 1 hour. This manipulation can be abandoned if the product is not frozen, but fresh. It is practically not at risk of such deformation.
  • Fish has a specific and not always pleasant smell. You can get rid of it if you use aromatic spices and lemon juice during the cooking process.

Tip: To check the readiness of the product, pierce the steak with a toothpick in several places. The tool should easily enter the pulp and pass through it. If you have to apply even the slightest force, you should wait a few more minutes.

  • Boiled products can be stored in the refrigerator for no more than 2 days. They are placed in a bowl or plate with a lid. The taste of the ingredients will be better preserved if you also use the broth in which they were boiled.
  • Today, most stores offer two types of catfish - spotted and striped. They practically do not differ from each other in taste and composition, their meat has the same delicate fibrous structure. Both steaks are cooked according to the same rules.

Pieces of catfish can be boiled in their pure form, wrapped in a bag or foil. Processing features affect the texture and juiciness of the meat, but have virtually no effect on the duration of exposure.

How to cook catfish steak the traditional way?

If the steak is frozen, it should be thawed in the refrigerator and then kept at room temperature for a while. Then, if necessary, remove the remaining scales, cut off the fin, if any, soak and wash the workpieces.

  1. Place the fish pieces into a pan. If possible, you should take a container in which the steaks can easily lie next to each other, this will reduce the risk of deformation of the product.
  2. If the fish is boiled for fish soup, add it to cold water. When catfish needs to be made into a main dish or prepared for adding to a salad, the product is immersed in boiling water.
  3. Cook the component in boiling water at low bubbling for 10 minutes. In this case, you should regularly remove foam and dirt from the surface of the liquid.

The finished product is carefully removed from the boiling water, served or used for its intended purpose.

How to deliciously cook steamed steak?

For a couple of large steaks, take carrots, medium beets, 3 tablespoons of sour cream, a handful of walnuts, half a glass of dry white wine, lemon, a couple of cloves of garlic, a little parsley and basil, black pepper and salt to taste, and a laurel leaf.

  • Pour a glass of water into the pan, add wine and bay leaf, bring to a boil. Then add the grated beets and carrots into the broth. Rub the steaks with salt and pepper.
  • After 10 minutes of cooking, place a colander on the pan, place the prepared fish in it and cover with a lid. The product must be cooked for at least 20 minutes, occasionally checking it for doneness.
  • During this time, prepare a sauce in a saucepan from sour cream, chopped nuts and garlic, and chopped herbs. It just needs to warm up thoroughly.

Serve steamed catfish and top with sour cream sauce. Fresh or boiled vegetables are the perfect side dish for this dish.

Recommendations for preparing the product in a slow cooker and double boiler

If desired, catfish steak can be boiled not only in the traditional way. An equally tasty dish is obtained using the following approaches.

  • In a slow cooker. Place the main component in the bowl of the device and fill it with cold water, which should completely cover the fish. Add spices and salt to taste, you can put a bay leaf or a sprig of rosemary on top. Close the lid, set the “Cooking” mode and wait no more than 10 minutes. Then open the lid and continue to cook the product until cooked (no more than 10-15 minutes), regularly skimming the foam from the surface.
  • In a steamer. Place the pre-processed component in a tray, add some salt and pepper, and place a few laurel leaves next to it. Under no circumstances should this component be placed directly into a bowl of water; it may damage the heating element. Processing time ranges from 20 to 30 minutes depending on the size of the fish pieces. It is recommended to keep it in the steamer until serving so that the meat does not start to dry out.

You can also serve catfish steak on your fish soup. In this case, it is best to first boil the component in vegetable broth, then cut it into small pieces and remove a few seeds. We filter the remaining liquid and use it to boil vegetables. Place the fish meat on plates with the spilled fish soup.
