I experimented for about two weeks before I came to this option, I think it will be useful for those who, like me, are seeking the “holy grail” of pp - sugar-free marshmallows.

Important: agar and its gelling ability differs from manufacturer to manufacturer, so the result may not be the same as mine if you use a different brand of agar-agar.

Erythritol has a remarkable ability to maintain structure (like sugar), so replacing it with another sweetener will not work.

Preparation

  3. Defrost the currants in the microwave, puree, rub through a sieve (about 200g will remain), and boil to 80g.
  4. Place a saucepan with currant puree, agar and 70g on the stove. erythritol, bring to a boil over low heat.
    The mixture is very thick, so be careful not to burn. Since I don’t have a thick-bottomed saucepan, I just put a regular one in a frying pan and boil in it. It’s very convenient to do this for making custard, for example.
  5. Beat the egg whites, add 30g. erythritol, beat until soft peaks form.
  6. Add cooled applesauce to the whites and beat.
  7. After a couple of minutes, add thick berry syrup little by little, do not pour it onto the mixer beaters! Beat until stable peaks form.
    The mass begins to thicken. I advise you to place the container on your lap to control the temperature - the agar hardens at room temperature. As soon as the container is no longer warm, it’s time to remove the marshmallows.
  8. Transfer the mixture into a pastry bag and place on baking paper or a silicone mat. This needs to be done quickly!
  9. Dry at room temperature overnight, fold the halves one next to the other, sprinkle with powder or starch using a brush as desired. Enjoying homemade healthy marshmallows.

Separately, heat the syrup with water. As soon as it starts to boil, add sugar and heat until the liquid is reduced. This should be done at medium temperature.

Add the sweet syrup to the apple mass and continue kneading until the entire mass thickens. Quickly put the mixture into a pastry bag and place the marshmallows on a baking sheet with oiled paper. Let stand for 10-12 hours - you can leave it overnight.

On a note. The more sour the apples, the more pectin they will contain - a substance that gives the base a dense and stable consistency.

Raspberry recipe

Berry marshmallows are no less tasty than classic apple marshmallows. We suggest saving the recipe to please your loved ones with an unusual delicacy during the harvest period.

  • raspberry puree - 125 g;
  • sugar - 100 g;
  • egg white - 1;
  • agar-agar - 1 g;
  • water - 75 ml;
  • sugar - 200 gr;

Beat egg whites and berry puree until fluffy foam forms.

Prepare the syrup - mix agar, water and sugar and heat on the stove until it begins to thicken and reach for a spoon.

When the products have hardened, tear off the halves, put them together and roll in powder.

Delicious apple marshmallows are prepared quickly enough. The result is quite a lot of fragrant, soft lumps of tea treats that your household will definitely appreciate.

How to cook with gelatin?

Making marshmallows is much easier using gelatin - while agar can be found in large grocery hypermarkets, gelatin is available in almost every store.

Pour hot water over the gelatin and leave to swell.

Bake the apples and prepare the puree by rubbing them through a sieve. It is recommended to remove the skin before grinding. Add sugar. Process the mixture with a mixer.

Divide the egg into white and yolk. First, add half of the protein to the apple mixture, and after a few minutes of beating, add the second half. Continue beating until the mixture becomes fluffy, white and thick.

Add warm syrup and beat for a few more minutes. The consistency will begin to change quickly.

The mixture must be quickly dispensed with a pastry syringe/bag. The marshmallow preparation begins to set very quickly, and if you delay planting, the process can become difficult.

Marshmallow with agar-agar

Agar-agar, no worse than gelatin, makes the mass thicken and subsequently maintain its shape.

  • apples - 2 units;
  • sugar - 300 gr;
  • egg white - 1;
  • vanillin;
  • agar-agar - 5 g;
  • water - 75 ml.

Peel and core the apples, cut into cubes and simmer in a frying pan until soft. Turn into puree. Combine with 100 grams of sugar, heat until the latter dissolves, leave to cool.

Mix the agar with water and leave for 3 hours. In this recipe, under no circumstances should you replace agar with gelatin. After boiling, combine with sugar, cook while stirring. Cook until the syrup begins to form a thick thread from the spoon.

Beat the applesauce for a few minutes, then add the egg whites and beat again until the mixture becomes light. At this stage, you can begin to gradually pour in the syrup without stopping whipping. The mass will become fluffy and thick.

The workpiece is ready. The products are allowed to harden for at least 4 hours.

How to make marshmallows at home?

Modern marshmallows appeared relatively recently in the United States, only in the fifties of the last century. We suggest preparing them at home.

  • egg white - 2;
  • sugar - 400 gr;
  • water - 160 ml;
  • powdered sugar - 150 g;
  • corn starch. - 50 g;

Rub the berries through a sieve to make a puree.

Mix the starch and powder together, then pass through a sieve, forming a thin layer on parchment paper.

Divide the protein mass into 2 parts. Pipe stripes with one using a pastry bag, mix the second with berry puree and also make stripes. After a couple of hours, cut into pieces and roll in the powdery-starch mixture.

Chocolate treat

Homemade marshmallows can be made not only from apples or berries - it can also be chocolate, with the aroma of honey.

  • gelatin - 10 g;
  • apple puree - 200 g;
  • granulated sugar - 150 g;
  • dark chocolate - 100 g;
  • honey - 100 g;
  • cocoa - 40 gr.

Let's prepare the syrup: let the gelatin swell, then heat it with water and sugar. Let cool.

Melt the broken pieces of chocolate using a water bath method. Using a mixer, process the syrup, chocolate mass, puree and honey. Pour into the mold and leave to set in the refrigerator for at least an hour. Cut into pieces and roll in cocoa.

Strawberry marshmallows

  • 400 g sugar;
  • egg (white);
  • 8 grams of agar-agar;

  • 150 g strawberry puree;

First of all, mix the agar with water. Leave for a quarter of an hour. Combine with sugar, boil, and reduce slightly.

Combine applesauce and strawberry puree with a mixer, followed by egg whites. Continue beating until a thick mass forms. Add the syrup in a thin stream without stopping the mixer. Use a pastry bag to pipe marshmallows and sprinkle with powdered sugar. Leave to harden.

Cooking recipe according to GOST

  • 4 apples or 250 grams of ready-made puree;
  • 250 g sugar;
  • protein;
  • vanilla;
  • 475 grams of sugar for syrup;
  • 160 g of water;
  • 8 grams of agar.

Prepare the agar immediately by soaking it in water. If necessary, prepare fruit puree if you don’t have one prepared in advance. Combine the puree with sugar and vanilla using a mixer. If the puree is still at a warm temperature, then leave it to cool for a while.

Preparation:
Place the strawberries in a saucepan (frozen ones do not need to be defrosted), add a little water. Place on the fire, bring to a boil and cook for 2-3 minutes. Remove from heat and puree with a blender. Return to the heat and continue to simmer over medium heat. Cook for about 15 minutes. Remove the puree from the heat and rub through a sieve. You should have 250 g of puree. Mix starch with sweetener. Add sweetener to the puree. Return to the heat and cook for 2-3 minutes. Add sweetener with starch, stir and cook for about 5 minutes.

Remove from heat and cool completely - to speed up the process, do this in an ice bath. Mix the sweetener with agar. Set aside. Mix the remaining sweetener with water, put it on the stove and cook until it boils. Then, with constant stirring, pour the agar-agar mixture and sweetener into the boiling syrup in a thin stream.

Cook the syrup to a temperature of 110 degrees. At the same time, add the protein to the puree and beat with a mixer until a fluffy mass is obtained. Without stopping whisking, gradually pour in the agar syrup in a thin stream. Beat until you get a meringue-like mass. Transfer the mixture into a pastry bag with a nozzle and place the marshmallows on parchment paper or a silicone mat. Leave the marshmallows at room temperature overnight or at least for 5 hours - during this time they should dry out.

Using a mixer, beat the puree for ten minutes until a fluffy, dense mass is obtained. Transfer the airy mousse into the mold and smooth it out. Place in the refrigerator for 8-10 hours. Cut the finished delicacy into pieces.

Preparation:

What is marshmallow

Marshmallow is a confectionery product belonging to the sugary family. This genus of marshmallow has ancient origins. Historians claim that it appeared in the Middle East, Western Asia, and Southern Europe. When preparing, we used egg white and granulated sugar as the main components. The ancient oriental sweet is different from today's. A modern variety of marshmallow with balanced BJU indicators was invented by Ambrosy Pavlovich Prokhorov.

Cooking method

  • Soak the agar in the specified amount of water 30 minutes before preparing the marshmallows.
  • Pour (loudly said) water over the sugar, put it on the fire, let the sugar disperse and cook the syrup for 5-7 minutes. Do not stir with a spoon, you can only rock the ladle from side to side, otherwise it will crystallize and come into clumps. At the end, add lemon and stir. Pour in the soaked agar-agar and cook together for another 3 minutes.
  • While the syrup is boiling, you need to beat the jam with the egg white until the mass turns white and increases in volume by 3-4 times.
  • Pour sugar-agar syrup into the whipped mass in a thin stream, without stopping whipping, and beat for another 1 minute.
  • Transfer the marshmallow mixture into a pastry bag with a nozzle and pipe onto parchment paper. I got 1 large baking sheet, maybe more, I’m just still adapting to the new assistant, and I tightened the whisk after cooking. In general, this can be done with a regular mixer.
  • Well, that’s all, all that remains is to sit for at least 12 hours in a dry place (in my oven), during which time the marshmallows should be covered with a thin crust. Roll in powdered sugar and serve with tea and coffee.

How to make low-calorie marshmallows

You will need:

  • two slabs of gelatin (one slab corresponds to two grams of gelatin granules)
  • three teaspoons of sweetener
  • four drops each of vanilla essence and any food coloring
  • one hundred eighty milliliters of water

This dietary marshmallow is prepared by preparing gelatin. The plates are filled with cold water and left to swell for fifteen minutes. Water is divided into eighty and one hundred milliliters. A smaller amount remains in the bowl, a larger amount is brought to a boil, sakhzam, gelatin, dye and vanilla essence are added.

When thinking about how to make marshmallows fluffy and tender like in the store, keep in mind that you are unlikely to be able to beat the mass so well with your hands, so mix the remaining water and the boiled gelatin mass in a blender. You will have to spend about fifteen minutes whipping until you get “snow.”

Now you can form small portions of sweets using a pastry syringe. Don't forget to place the marshmallows in the refrigerator for two to three hours to harden.

  • Boil the applesauce over low heat or in the microwave until it reaches 100g. I used sugar-free baby puree, you can take 4-5 apples, bake them, puree them, rub them through a sieve - the result will be the same.
  • Soak the agar in 60g. water, set aside.
  • Defrost the currants in the microwave, puree, rub through a sieve (about 200g will remain), and boil to 80g.
  • Place a saucepan with currant puree, agar and 70g on the stove. erythritol, bring to a boil over low heat.

    The mixture is very thick, so be careful not to burn. Since I don’t have a thick-bottomed saucepan, I just put a regular one in a frying pan and boil in it. It’s very convenient to do this for making custard, for example.

  • Beat the egg whites, add 30g. erythritol, beat until soft peaks form.
  • Add cooled applesauce to the whites and beat.
  • After a couple of minutes, add thick berry syrup little by little, do not pour it onto the mixer beaters! Beat until stable peaks form.

    The mass begins to thicken. I advise you to place the container on your lap to control the temperature - the agar hardens at room temperature. As soon as the container is no longer warm, it’s time to remove the marshmallows.

  • Transfer the mixture into a pastry bag and place on baking paper or a silicone mat. This needs to be done quickly!
  • Dry at room temperature overnight, fold the halves one next to the other, sprinkle with powder or starch using a brush as desired. Enjoying homemade healthy marshmallows.
