  • potatoes – 5 pcs.
  • carrots – 2-3 pcs.
  • boiled meat or sausage - 200 gr.
  • eggs – 3 pcs.
  • fresh cucumber – 2 pcs.
  • canned cucumber – 3 pcs.
  • canned green peas – ½ can
  • onion – 1 head
  • dill, ground black pepper - to taste

This recipe is probably familiar to everyone, right, every housewife has her own little secrets in preparing it. We boil the vegetables - I boil the potatoes in their skins, I don’t peel the carrots - this way more nutrients are retained. Boil the eggs separately. For the salad, you can use boiled beef, chicken, smoked turkey fillet, or you can do without meat altogether.

Cool the boiled vegetables and chop them one by one. I like to mash the potatoes in this salad, then the whole salad turns out more rich. Chop carrots and eggs finely. The smaller the pieces, the tastier the salad.

I add both fresh and canned cucumbers to the Olivier salad. Some do not interfere with others at all. I always add onions or green onions, but I know that not everyone likes onions in salads. So improvise. All that remains is to add canned green peas, dill and sprinkle with black pepper to our salad. I don’t add salt to the salad, since the salty mayonnaise with which we season the salad is sufficient.

The next salad for the New Year is called “Brut”, because not a single New Year is complete without champagne.

Brut salad with beef

Ingredients:

  • beef (can be replaced with chicken) - 200 gr.
  • potatoes - 2 pcs.
  • carrots - 2 pcs.
  • eggs - 2 pcs.
  • kiwi - 1 pc.
  • salt - to taste
  • cheese, dill for decoration
  • mayonnaise

Pre-boil beef, potatoes, carrots and eggs. Peel the kiwi. Finely chop all ingredients. Add mayonnaise, salt, mix everything. Mark bottle-shaped lines on the plate and place the salad along the lines on an elongated dish. Press the top down a little with a spoon to thicken the salad.

Grate the cheese and decorate the neck of the bottle with grated cheese. Decorate the bottle with finely chopped dill. Cut out stars from the remaining slices of cheese; you can use a pastry bag to write letters from mayonnaise.

This simple and very tasty salad, decorated in a New Year's style, will surely decorate your holiday table.

“Black pearls in the snow” - delicious salad with veal

An unusually beautiful and tasty salad. Moreover, it is prepared quite simply and makes it look wintery thanks to the grated cheese. Black grapes or olives will serve as pearls.

Ingredients:

  • boiled veal - 200 gr.
  • eggs - 3 pcs.
  • hard cheese -100 gr.
  • walnuts - 80 gr.
  • seedless grapes (can be replaced with black olives)
  • salt and mayonnaise to taste

Boil the veal in salted water, cool and tear into strips. Boil eggs, grate. Grate the cheese on a coarse grater, set aside some of the cheese for decoration. Chop walnuts. Now mix each ingredient with mayonnaise separately, and then lay it in layers. The bottom layer is veal, then nuts, cheese, eggs. Sprinkle grated cheese on top. Place dark grapes or olives in a mound in the middle, and sprinkle a little more cheese on top.

For those who don’t like salads with mayonnaise, I recommend the beef salad with a wonderful sauce. This salad looks beautiful in portioned plates.

Salad with beef and caper sauce

Take note of this recipe - the salad is unusually light thanks to beef and vegetables. We cook without mayonnaise, instead I offer a delicious dressing with mustard and capers.

Ingredients:

  • beef - 500 gr.
  • lettuce leaves – 200 gr.
  • Cherry tomatoes – 100 gr.
  • red onion – ½ head
  • For refueling:
  • capers – 2 tbsp. l.
  • lemons – 2 pcs.
  • mustard with grains - 2 tbsp. l.
  • olive oil – 5 tbsp. l.
  • sugar – 1 tsp.
  • salt - a pinch
  • parsley – 4 tbsp. l.

Cut the beef into thin strips and fry in olive oil. Fry over moderate heat until the meat becomes soft.

Cut the red onion into rings, cut the tomatoes in half.

If you don’t like fresh onions, you can pre-marinate them: pour cold water with 1 tbsp for 10 minutes. l. vinegar and a pinch of sugar. The bitterness will go away and the onion will taste pleasant.

Place lettuce leaves on a plate, then onions and tomatoes. Place beef on top.

For dressing, mix mustard, squeeze lemon juice, add salt, sugar and olive oil. Stir everything well and add capers to the dressing at the end. Pour the delicious sauce over the salad and enjoy.

Chicken salad “Little Red Riding Hood”

Chicken salads are also very popular; probably not a single holiday table can do without them. Now it has become fashionable to decorate dishes with pomegranate seeds; it is really tasty and beautiful. The famous “Garnet Bracelet” has become a little boring, although it is still popular. The “Little Red Riding Hood” salad is no less beautiful and tasty.

Ingredients:

    • chicken fillet - 500 gr. onion – 1 pc.
    • carrots – 2-3 pcs.
    • pomegranate – 1 pc. eggs – 3 pcs.
    • cheese – 100 gr.
    • walnuts – 150 gr.
    • potatoes – 3 pcs. mayonnaise

Boil the chicken fillet until done. Cut the chicken into cubes. Boil potatoes and carrots in their skins, cool.

Also cut vegetables and eggs into small pieces. Chop the walnuts and leave a few for decoration. Peel the pomegranate and separate it into grains. Grate the cheese on a coarse grater.

Layer onions, potatoes, chicken, nuts, eggs, carrots on a large flat dish. Lubricate each layer with mayonnaise. Sprinkle grated cheese on top.

Decorate the middle of the surface with pomegranate seeds and dill sprigs. Cover the bottom of the salad with walnuts.

Salad with chicken and prunes “Mercury”

The Mercury salad was borrowed from Yulia Vysotskaya. An interesting combination of chicken, champignons and prunes.

Ingredients:

  • chicken fillet - 300 gr. onions – 2 pcs.
  • champignons – 300 gr. fresh cucumber – 1 pc. eggs – 3 pcs.
  • pitted prunes – 25 pcs.
  • vegetable oil mayonnaise
  • salt, pepper to taste

Cut the onion into half rings. Peel the champignons, dry with a napkin and cut into thin slices. Fry onions and mushrooms in vegetable oil. Pour boiling water over the prunes for a few minutes. Place in a sieve to remove excess water. Boil the chicken in salted water, cool and cut into pieces. Cut the cucumber into thin strips. Grate the eggs on a coarse grater. Cut the prunes into small cubes. The ingredients are ready.

Now let's quickly assemble our salad. We lay out the layers in the following sequence: prunes, chicken, onions with mushrooms, eggs, cucumber and again prunes and chicken. Each layer, except for the layer of mushrooms and onions, is greased with mayonnaise. It is advisable to add a little salt and pepper to each layer. You can decorate the salad with fresh cucumber sliced ​​into circles, although there are many other ideas for decorating salads.

Salad "Chicken's Nest" with chicken and champignons

The next wonderful and beautiful salad has a completely different taste, more spicy. I cooked it with smoked chicken, it turned out very spicy.

Ingredients:

  • chicken fillet (smoked chicken is also suitable) - 300 gr.
  • red onion – 2 pcs.
  • wild mushrooms or champignons – 300 gr.
  • fresh cucumber – 1 pc.
  • Chinese cabbage – 100 gr.
  • cheese – 100 gr.
  • quail eggs – 10 pcs.
  • vegetable oil mayonnaise
  • salt, pepper to taste

Shred the Beijing cabbage and mash it slightly. Boil the chicken fillet, if you have smoked chicken, then cut into cubes. Cut fresh cucumber into thin strips. Grate the cheese on a coarse grater. Chop the mushrooms and fry in vegetable oil. Pickle red onions with vinegar (mix water and vinegar in equal proportions, add a little salt and a pinch of sugar).

Place the salad on a plate in layers in the following sequence: Chinese cabbage, chicken, cucumber, cheese, mushrooms. Coat each layer with mayonnaise, add a little salt and pepper. Place red onion on the sides. Let the salad soak well. Before serving, place quail eggs on top.

Beautiful salad with chicken in orange

Serving the following salad in an orange slice is very suitable for any holiday table - both for a birthday and for the New Year. Thanks to dried cherries (or cranberries), the salad will be tender and sweet. Chicken goes well with these sweet ingredients.

Ingredients (for 4 servings):

  • chicken fillet (smoked chicken is also suitable) - 300 gr.
  • walnuts – 100 gr.
  • oranges – 2 pcs.
  • dried cherries or cranberries - 4 tbsp. l.
  • cheese – 100 gr.
  • lettuce leaves for serving salad
  • light yogurt
  • salt to taste

Cut the oranges in half into 2 cups. The edges of the cups can be immediately cut into cloves for beauty. Carefully cut out the pulp with a sharp knife.

Boil chicken fillet or leg (thigh) in salted water, cool. Cut the meat into small cubes. Cut the orange pulp into small pieces. Grind walnuts. Pour boiling water over dried cherries (or cranberries) for 10 minutes, drain the water and add the berries to the salad. Add hard cheese cut into small cubes.

Season the salad with salt and yogurt (or mayonnaise). Place into prepared orange vases. Now we place lettuce leaves on a plate, and orange cups on them. Beauty!

Tuna salad “Santa Claus hat”

Fish salads are distinguished by their sophistication and lightness. Therefore, recently such salads have been very popular. They can be prepared with both salted (lightly salted) fish and canned fish. I would include salads with crab sticks in this category. This easy-to-prepare tuna salad comes together in one or two minutes. We decorated it with tomatoes on top and it turned out to be a Santa Claus hat.

Ingredients:

  • canned tuna – 1 can
  • chicken eggs – 3 pcs. cheese – 150 gr.
  • tomatoes – 4 pcs.
  • mayonnaise
  • salt, pepper to taste

Mash the tuna with a fork. Boil the eggs, separate the whites and yolks from 2 eggs. The whites will be useful for decoration, and finely chop everything else.

Finely chop two tomatoes. Grate the cheese. Mix all ingredients, add mayonnaise. Salt, pepper a little and place in a mound shape so that it looks like a hat.

Now all that remains is to decorate the salad. Grate the whites on a fine grater. Cover the edges of the salad with egg white and make a pom-pom at the top of the egg white. Cut the tomato into cubes and decorate the sides of the salad in the form of a hat.

Salad with crab sticks “New Year’s Garland”

Another light and interesting salad that will decorate the New Year's table. The bread, toasted until golden brown, actually gives the dish the appearance of sparkling lights.

Ingredients:

  • tomatoes – 4 pcs.
  • crab sticks – 200 gr.
  • canned corn – 1 can
  • garlic – 2 cloves
  • cheese – 200 gr.
  • white bread – 3 slices
  • mayonnaise

Cut the tomatoes into cubes, add salt and add garlic that has been passed through a press. If the tomatoes have released juice, you need to drain it so that the finished salad does not become liquid.

We also cut the crab sticks into small cubes. Three cheeses on a coarse grater. Cut white bread into small cubes and fry in sunflower oil. While frying the bread, do not leave the stove - the croutons fry quickly and may burn.

Lay the salad in layers, spreading each layer with mayonnaise: tomatoes, crab sticks, corn, cheese. We also coat the cheese layer with mayonnaise. Sprinkle the top thickly with crackers.

Festive salad with red fish - “Salmon on a fur coat”

We are used to preparing the “Herring under a Fur Coat” salad for the holidays, but now I offer an equally delicious fish salad “Salmon with a Fur Coat.” Here the fish is not underneath the vegetables, but on top and serves as a decoration.

Ingredients:

  • salmon (can be replaced with salmon) – 200 gr.
  • beets – 3-4 pcs.
  • carrots – 2-3 pcs.
  • eggs – 3-4 pcs.
  • cheese – 120 gr.
  • onions – 2 pcs.
  • mayonnaise
  • salt, pepper to taste

First boil the beets, carrots and eggs, let everything cool. Cut the fish into cubes or thin strips. Grate eggs, cheese, carrots and beets on a coarse grater. Cut the onion into small cubes.

Now we “assemble” the salad. Cover the bottom of a deep salad bowl with cling film so that its edges hang down. Place the salmon in the first layer and finely chopped onion on top. We make a mayonnaise mesh. Now we lay out the ingredients in layers, coating each layer with mayonnaise in the following order - eggs, carrots, cheese, beets. Lightly tamp all layers with a spoon to compact them.

Wrap the salad in film and put it in the refrigerator for 2-3 hours. Before serving, open the film, cover the salad bowl with a flat plate and turn it over sharply. As a result, the salmon ends up at the top. If desired, you can decorate the salad with herbs.

Shrimp salad “Ocean”

An incredibly tasty salad with shrimp, also beautiful and quite suitable for a festive New Year's table. I prepare this salad in portioned salad bowls, and although not everyone likes seafood, it is eaten without leaving a trace.

Ingredients (for 6 servings):

  • shrimp – 200 gr.
  • cheese – 150 gr.
  • tomato – 2 pcs.
  • eggs 3 pcs.
  • mayonnaise, salt - to taste
  • dill for decoration

We place the salad immediately in portions for each person in separate salad bowls in layers.

Grate the eggs on a coarse grater. This will be the 1st layer. Add a little salt and coat lightly with mayonnaise.

Cut the peeled or thawed shrimp into 2-3 parts and place the 2nd layer. And again coat with a little mayonnaise.

Three cheeses on a coarse grater, place the third layer, and again coat with mayonnaise.

We cut ripe tomatoes into cubes and place them in a heap on top of the salad. You can add a little salt and sprinkle with black pepper.

To decorate, put a little mayonnaise on top, a sprig of dill, you can decorate with shrimp and lemon.

The salad should cool in the refrigerator for at least 1 hour, then the combination of all these ingredients will become especially tender.

Salad with caviar and squid “Sea Pearl”

Well, what can you say when the ingredients include squid and red caviar? Such a masterpiece can only be used on a festive table to surprise guests with its generosity. This dish turns out incredibly tender and beautiful.

Ingredients:

  • squid – 500 gr.
  • crab sticks - 250 gr.
  • red caviar – 150 gr.
  • eggs (whites) - 5 pcs.
  • quail egg for decoration - 1 pc.
  • mayonnaise, salt - to taste

Boil the squid in salted water, cool and cut into thin strips. Cut crab sticks into cubes. Boil the eggs, separate the whites from the yolks. We don't need the yolks, but grate the whites on a fine grater. Mix all the ingredients, add a little salt, add mayonnaise and finally add red caviar. Place in a heap in a salad bowl and decorate with more caviar on top.

Swiss New Year's salad without mayonnaise

For those who appreciate vegetarian food and just for variety, this recipe will be just right. Light and low-calorie, and most importantly - without mayonnaise

Ingredients:

  • a bunch of beet leaves or 5-6 red cabbage leaves
  • pomegranate - 1/2 pcs.
  • red grapes - 100 gr.
  • tangerines – 2 pcs.
  • onions – 1 pc.
  • pomegranate seeds - 2 tbsp. l.
  • apple – 1 pc.
  • pecans (can be replaced with any others) – ½ cup
  • apple cider vinegar – 2 tbsp. l.
  • coriander, salt, pepper, turmeric - to taste
  • maple syrup (can be replaced with balsamic cream) - 1 tbsp. l.

To decorate the salad, use a knife or a cookie cutter to cut out a star from a slice of white bread. Fry the bread in vegetable oil and leave to cool.

Let's proceed directly to the salad. All ingredients are fresh, without heat treatment.

Cut beet or cabbage leaves into thin strips. Cut the grapes in half, onions, tangerines and apples into cubes. Finely chop the nuts.

Prepare the dressing - mix apple cider vinegar, maple syrup and spices in a bowl. You can add turmeric at your discretion; not everyone likes it in a salad, however, it gives this dish a special aroma.

In a large flat salad bowl, mix all the ingredients and season with sauce. Place the salad in a mound, place a star on top and sprinkle with pomegranate kernels.

French orange and avocado salad

Another easy-to-prepare and good-for-the-body salad without mayonnaise with a very tasty honey sauce.

Ingredients:

  • lettuce leaves - 300 gr.
  • orange – 1 pc.
  • avocado – 1 pc.
  • roasted almonds (can be replaced with other nuts) – ½ cup
  • onions – ½ pcs.

For refueling:

  • honey - 1 tbsp. l.
  • vegetable oil – ½ cup
  • salt – 1/2 tsp.
  • wine vinegar - 4 tbsp. l.
  • pepper

Disassemble the orange into slices, and cut the slices crosswise into thin slices. Cut the avocado into thin slices, the onion into thin half rings. Place lettuce leaves, avocado, orange and onion pieces in a salad bowl. Prepare the dressing - mix honey, vegetable oil, salt, wine vinegar, add ground pepper and stir well. Before serving, pour the dressing over the salad.

Beautiful salad with beets and mozzarella

I have exclusive salads in my collection that are very simple to prepare and at the same time surprise guests because of their novelty.

This salad with beets is extremely simple, but at the same time beautiful and, I think, suitable for a holiday table.

Ingredients:

  • beets – 2 pcs.
  • mozzarella – 100 gr.
  • mint – 3 sprigs
  • balsamic cream - to taste (can be replaced with lemon juice and honey sauce).

You can bake the beets whole, wrapped in foil, or you can immediately cut them into slices onto a baking sheet to speed up the process. Bake in the oven for about 15 minutes. Then cool the beets and place on a plate. Arrange the mozzarella circles randomly on a plate. Garnish with fresh mint leaves on top and drizzle with balsamic cream.

Original salad with avocado, spinach, almonds and poppy seeds

Do you want to surprise your guests? Then try to cook according to this recipe, they probably haven’t tried this before.

Ingredients:

  • spinach leaves - 200 gr.
  • avocado – 1 pc.
  • cheese with white mold - 70 gr.
  • sour cream (can be replaced with yogurt) - 3 tbsp. l.
  • mayonnaise - 1 tbsp. l.
  • garlic - 1-2 cloves
  • poppy seed - 1-2 tsp.
  • almonds - 50 gr.
  • butter - 1 tbsp. l.
  • sugar - 1 tsp.

Place spinach leaves in a salad bowl. Cut the avocado and cheese into cubes and arrange them randomly in a salad bowl.

Prepare the dressing: mix sour cream or yogurt with mayonnaise, add pressed garlic, add poppy seeds.

When I prepared this salad for the first time, I doubted that garlic and poppy seeds would go together. But I can assure you that it turns out quite spicy.

We get a thick sauce and since we don’t mix the salad, we simply lay it out randomly on the salad bowl.

And the last accent is with nuts. Heat the butter in a frying pan, add sugar. When the sugar has dissolved, add the almonds and fry them a little until golden brown.

We decorate our salad with cooled nuts.

Cut the ham into small, thin, long pieces. Cucumbers and tomatoes should be cut into small slices or cubes. Peel the boiled eggs and finely chop them with a knife.

For example, put all the chopped products into a large container, a deep bowl, add salt and the required amount of mayonnaise. Mix everything carefully. Sprinkle chopped herbs on top. Festive salad with ham and mushrooms is ready to be served on the New Year's table.

Hints! Eggs and cucumber can be grated, then the meat salad will become much more tender and will not take much time.
It is better not to pour the resulting tomato juice into the salad when slicing.

What products are needed:

  • 200 g of ham (or half-smoked sausage, or brisket, or neck - whatever your budget allows);
  • 100 g hard cheese;
  • a bunch of Beijing lettuce (if it is not available, ordinary juicy white cabbage will do);
  • half a loaf;
  • mayonnaise;
  • random greenery for decoration.

How to prepare ham salad with cheese and croutons - recipe with photo:

Cut the ham or its equivalent into strips. We do the same with Beijing salad (cabbage). It is advisable to mash the cabbage separately until the juice releases. Grate the cheese on a medium grater. Mix everything and add some salt.

We make mini crackers in an elementary way - cut the loaf into cubes, place the cubes on a baking sheet and place in a slightly preheated oven. We wait. Then let the dried bread cool.

You should add croutons to everything else immediately before serving the dish, otherwise they will soften and stop crunching. You should also add seasoning in the last minutes before serving.


New Year's salad with chicken, ham, cheese and eggs

Necessary products for cooking:

  • ham sausage – about 120 g;
  • pickled cucumber - two pieces;
  • chicken, leg meat - one piece;
  • cheese, hard varieties possible – 80 g;

  • fresh greens;
  • green onions - a small bunch;
  • sour cream or mayonnaise - 5 tablespoons;
  • salt - to your taste.

Prepare a festive salad with ham sausage, chicken, cheese and boiled eggs:

Cut the ham sausage and cucumbers into small strips. For portioned serving, you need to cut it as finely as possible, maybe into cubes. Peel the eggs, immediately leave one yolk to decorate the dish, and finely chop the remaining eggs.

The greens need to be chopped very finely, using only one leaves.

If you decide to make a portioned salad, then you need to grate the hard cheese on a coarse grater. But, nevertheless, we decided on the usual serving, you need to cut the cheese into cubes.
