Cooking


From flour, yeast, eggs, butter, milk and salt, knead the dough, let it rise, put it on a greased baking sheet and make a cake. Boil the mushrooms in salted water, finely chop and mix with roasted peppers.
Lubricate the cake with tomato sauce and put a mass of mushrooms and pepper on it, then circles of fresh cucumbers, put a slice of cheese on each circle. Pour all over with melted butter.
Bake pizza until cooked in the oven at medium temperature.

39. Mushroom pizza with zucchini


For the base : 1 kg flour, 2 eggs, salt, 1.5 liters of warm water.


For filling : 600 g of zucchini, 200 g of sour cream sauce, mushrooms and tomatoes, 100 g of butter, herbs, spices.


For a baking sheet : 1 tbsp. a spoonful of fat


Cooking


From flour, eggs, salt and water, knead the dough, roll it out on a baking sheet in the form of a cake 1 cm thick and put in the refrigerator for 2 hours.
Peel the zucchini and cut into slices 1 cm thick, fry them in oil until half cooked. Put peeled porcini mushrooms or champignons in boiling water for 5-7 minutes, then put them in a colander, cut into thin slices and lightly fry in oil. Pour them with sour cream sauce and simmer until tender. Cut the tomatoes into thick circles, sprinkle with pepper.
Remove the dough from the refrigerator and put the filling on it in this order: zucchini, mushrooms, tomatoes. Put the pizza back in the oven and bake for 5-7 minutes at 200°C. Onion, finely chopped, fry in margarine until golden brown. Salt, pour in sour cream and tomato sauce. Cut the champignons into cubes and put them in a frying pan over high heat for 2-3 minutes. When the mushrooms are ready, salt them and mix well. With tomatoes, dousing them with boiling water, remove the skin and cut into cubes.
Roll out the finished dough to the size of the baking sheet and make high, but not thick sides along its edges. Put the prepared sauce on the cake and spread it over the entire surface. Put tomatoes on top, mushrooms on them and sprinkle everything with grated cheese.
Place pizza in preheated oven for 35-40 minutes. Transfer the finished dish to a board covered with parchment paper.

42. Chanterelle Pizza


For the base : 1 kg flour, 20 g yeast, 1 egg, 150 g margarine, 250 ml milk, 100 ml water, 50 g sugar.


For filling : 50 g of cheese, 200 g of chanterelles, 50 g of sausage, 60 g of tomato sauce and mayonnaise, egg, salt, dill and parsley.


For a baking sheet : 1-2 tbsp. tablespoons of vegetable oil.


Cooking


Cut the washed chanterelles into small pieces and put to boil for 1 hour. When the mushrooms are cooked, salt them. Dissolve the yeast in water, sift the flour, mix it with margarine and, adding sugar, chop the resulting mass with a knife. Pour milk into the dissolved yeast and, mixing well, mix with flour and margarine. Put the dough in a warm place for 10-15 minutes, then take it out and, having formed a ball out of it, roll in flour and put it again in a warm place, covered with a towel, for 40-50 minutes.
Cut the sausage into cubes. Mix mayonnaise with egg, salt. Finely chop the dill and parsley. Put the prepared dough on a greased baking sheet and roll it over its entire surface with a layer 5 mm thick.
Pour the tomato sauce over the cake and spread it over the entire surface. Put the chanterelles on the sauce in the 1st layer, pour them with mayonnaise and egg and put the 2nd layer - sausage. Sprinkle the filling with grated cheese and herbs.
Put the pizza in the oven and bake for 20 minutes at 230°C.

43. Pizza di Napoli


For the base : 300 g yeast dough.


For filling : 200 g pickled champignons, 100 g each fresh tomatoes and cheese, egg, 50 g each pickled onion and mayonnaise, salt, ground black pepper.


For a baking sheet : 1 tbsp. a spoonful of vegetable oil.


Cooking


Roll out the dough on a cutting board. The shape can be round or rectangular, but the width should not exceed the dimensions of the baking sheet. Leave the dough to proof in a warm place and prepare the filling.
Mix the raw egg thoroughly with mayonnaise. Chop the onion into rings, cut the mushrooms into halves or into four parts. Pour boiling water over fresh tomatoes and remove the skin. Salt and pepper everything.
Spread the filling, starting with mayonnaise mixed with egg. Then lay out the tomatoes, evenly put pickled mushrooms on them. Fry the minced meat in vegetable oil until cooked, cut the tomato into thin slices and add to the minced meat at the end of frying, pepper and salt. When the meat has cooled, spread it evenly over the surface of the cake. Top with halved pickled mushrooms. Grate the cheese on a fine grater, dry it a little and sprinkle it evenly over the entire filling. Carefully place pizza on a baking sheet with a thin layer of flour. Preheat the oven to 200°C and bake the pizza for 30-40 minutes.

46. ​​Delicious pizza


For the base : 200 g yeast dough.


For filling : 100 g of ham and cheese, 12-15 pitted green olives, 50 g of marinated champignons, 3 tomatoes, capers (3-4 git.), salt, pepper.


For a baking sheet : 1 tbsp. a spoonful of vegetable oil.


Cooking


Roll out the dough into a round thin cake, put it on a baking sheet sprinkled with flour and put in a warm place for proofing. 2 tomatoes free from the skin, mash into a homogeneous mass, lightly salt. Cut the ham into very thin slices, cut the pitted olives into halves lengthwise, chop the mushrooms. Chop the capers. Cut the remaining fresh tomato into thin slices. Cheese grate on a fine grater.
Put the tomato mass on the dough, spread the ham, mushrooms, olives on top, evenly put the capers and pepper. Sprinkle everything with cheese.
Preheat the oven to 200-220°C and bake the pizza for 30-40 minutes.

47. Pizza with champignons and green peas


For the base : 250 g flour, 25 g yeast, 50 g butter, 2 teaspoons sugar, 2 eggs, 100 ml milk.


For filling : 300 g green peas, 4 tomatoes, 200 g champignons, 200 g green grapes, 150 g ham, 4 tbsp. spoons of mayonnaise, parsley.


For a baking sheet : 1 tbsp. a spoonful of fat


Cooking


Knead the yeast dough, roll out the cake and put it on a greased baking sheet.
Cut the champignons in half, ham - into cubes, cut the grapes and remove the seeds. Tomatoes cut into large slices. Mix peas, mushrooms and grapes, put on the dough. Put the ham in the next layer, then the tomatoes. Lubricate with mayonnaise, sprinkle with herbs.
Bake in the oven until done. Bake in preheated oven for 25-30 minutes.
