How to cook Thai pancakes with banana recipe - a complete description of the preparation so that the dish turns out very tasty and original.

A very tasty dessert in Thailand are pancakes with banana, strawberries, pineapple and other fillings. They are usually prepared by Thai masters in bowls that say Pancakes. For a long time I avoided makashnitsa because I didn’t trust street food. But one day my friends suggested that I try Thai pancakes, and I just fell in love with them. I have never tasted such delicious pancakes anywhere else. Since then, I began to buy Thai pancakes quite often. In this article, I will share a recipe for authentic pancakes from Thailand so that each of you can try them.

  • flour - 500 grams;
  • milk - 1/2 cup;
  • salt - 1 pinch;
  • sugar - 1 tablespoon;
  • green tea - 1/2 cup;
  • liquid honey - 1 tablespoon;
  • palm (olive) oil - 100 grams;
  • ripe bananas - 15 pieces;
  • butter for cooking;
  • condensed milk;
  • melted chocolate or Nutela.

The recipe makes 20 servings. If you want less, then divide the amount of all ingredients in half.

Cooking instructions

1) Add flour, salt, sugar, warm milk and green tea, palm or olive oil to a deep bowl. Mix everything thoroughly and knead into a stiff dough. Grease the resulting dough with palm (olive) oil. You can wrap it in cling film or put it in a bowl and cover with a towel. Leave the dough for 1 hour.

2) Next, you need to divide the dough into small parts and roll them into circles. You should get 18-20 of these circles. Apply palm (olive) oil to each of these circles. Cover the dough with cling film and let it rest for another half hour.

3) Then from each circle you should make a thin flat cake in the form of a pancake. The thinner the better. The cakes should be almost transparent.

4) Heat a frying pan, add 1 tablespoon of butter and add the first pancake. While the pancake is cooking, quickly place the sliced bananas in the center and fold the edges into an envelope.

5) Then turn the pancake over and fry it for another half a minute.

6) Place the finished pancake on a napkin or paper towel. Cut it into 9 equal parts and pour condensed milk and melted chocolate (Nutela) on top. Thai pancakes should be eaten warm. Bon appetit!

This recipe was shared with me by a friendly Thai who works in a makashnitsa. And indeed the pancakes turned out almost the same as in Thailand. Now you can safely enjoy Thai dessert at home.

I recommend that you also try Thai banana pancakes, I'm sure you will like them. How to make Thai banana pancakes

If you have visited Thailand, then your memories are probably still haunted by the color of this fabulous country. As does the taste of amazing Asian dishes, because on the streets of Thailand you can try anything, and the famous Thai banana pancakes are just to die for!
And after all, preparing them at home to recreate the taste of an exotic delicacy is not so difficult - everything you need for the recipe can always be found in our kitchen.

Asian subtleties of Thai banana pancakes

Thai pancakes with banana are called "roti".

The dough for them is prepared very simply, without any frills, and you don’t need any video lessons to mix these ingredients:

This is because initially this was a recipe for Indian bread, and, as you know, bread is baked from the most affordable products in a given country.

The recipe was once brought to Asia from India. Now, perhaps, in every Asian country you can try similar pancakes.

For example, a recipe for Chinese pancakes does not contain sugar, but it does contain green onions. Malaysian roti is made from unleavened dough based on flour, water and oil. And the recipe for Singaporean “roti” is completely the same as the Thai one.

More often, these pancakes are served with various spicy sauces, sometimes with meat or egg filling.

But Thai pancakes with banana filling have won the love of both the local population and a huge number of tourists. In a mobile shop, these thin Thai banana cakes are prepared right before your eyes in just a couple of minutes.

This recipe can easily be adjusted and suggested adding mango, egg and banana and other goodies instead of the yellow tropical fruit. There can be a huge number of variations.

To top it off, the finished pancakes are topped with condensed milk or liquid chocolate, or maybe both. If you still haven't tried this dish, now is the time!

Here are two recipes for these amazing banana rotis.

Thai pancakes with banana and orange

In restaurants, as a rule, the dish turns out to be more refined by making small changes to the recipe. I suggest you experiment a little in the kitchen.

Making the batter for this version of Thai banana pancakes requires a little more ingredients, but trust me, it's worth it. And further preparation is completely similar to simple roti pancakes.

  • Flour – 0.4 kg;
  • Milk – 2/3 cup (warm);
  • Egg – 2 pcs.;
  • Salt – 1 tsp;
  • Sugar – 1 tbsp;
  • Creamy syrup, banana or orange – 100 ml;
  • Ripe bananas – 7 pcs.;
  • Oranges – 2-3 pcs.;
  • Vegetable oil (olive) – as needed, for rolling pancakes and baking.

Making Thai banana pancakes

  1. Beat the eggs into a container convenient for kneading the dough, add sugar and salt and beat until the sugar and salt dissolve.
  2. Then pour the flour into the container and mix with your hands.
  3. Add milk little by little to the resulting mixture, constantly kneading the dough until it becomes elastic, slightly softer than dumplings. Kneading time is about 10-15 minutes.
  4. We form a ball from the dough, grease it with oil, wrap it in cellophane and put it in the refrigerator for half an hour.
  5. Take out the dough and form it into balls the size of ping pong balls. You should get 16-18 balls. Don’t forget to grease them with vegetable oil, after which we put the dough back into the refrigerator to cool for half an hour to an hour.
  6. Peel bananas and oranges, cut bananas into circles, citrus fruits into pieces (separating the pulp from the films).
  7. We take the balls out of the refrigerator. We make a flat cake from the ball and knead it with our hands into the thinnest pancake. You can try rolling it out with a rolling pin in short movements, but the rolling pin and the cake should be greased with oil.
  8. Pour oil into a preheated frying pan (half a tablespoon before baking each pancake) and lay out our pancake. Immediately add chopped fruit to the center of the pancake (at the rate of a third of a banana and 1-2 tablespoons of orange per pancake). Fry for about a minute.
  9. Fold the edges of the pancake over the fruit mix. Turn the pancake over and fry for another half a minute.

Transfer the finished pancake to a plate. Pour syrup on top, and if there is none, then melted milk chocolate. Incomparable taste!

Once you try this dessert at least once, you will always cook it.

Thai banana pancakes recipe with photos

Prepared at home using this recipe with photos, banana pancakes taste very similar to the original traditional roti.

In addition, the proposed option is one of the simplest to implement. Try baking them for your family, because you’re probably already tired of regular pancakes.

Moreover, you can involve the whole family in preparing these pancakes. Together it will be faster, more positive, and, of course, tastier.

  • Let's melt the butter.

The fastest way to do this is in the microwave.

  • Pour the oil into a container convenient for kneading the dough.
  • Add salt and sugar to the butter. Mix thoroughly.
  • Add all the flour to the butter.

While stirring the resulting mixture, gradually add water. The consistency of the dough should be thick, slightly softer than for dumplings.

Knead for 10 - 15 minutes until it completely sticks from your hands and utensils.

We pack the dough in cellophane and put it in the refrigerator for half an hour.

After 30 minutes, take out the dough and form balls with a diameter of 2.5-3 cm. You should get 14-15 balls.

To prevent the dough from sticking to your hands, you need to grease your hands with vegetable oil.

Cover the bowl with the dough balls and put it in the refrigerator for at least half an hour.
While the dough is cooling, chop the peeled ripe bananas. Cut into thin circles, about 2 mm thick. One pancake will require about half a banana.

We take out our chilled balls. Lubricate your hands and the surface on which you will roll out the dough with oil.
First, we form a cake from the ball with our hands, and then carefully roll it out with our hands or a rolling pin into the thinnest pancake until transparent.

And, of course, we take into account the diameter of the pan. If the pancake turns out to be thick or rolls out larger than the diameter of the frying pan, it is better to reduce the subsequent balls by pinching off a little dough from them.

Place the rolled pancake with your hands on a heated frying pan. Place banana slices in the center of the pancake, and then fold the edges of the pancake into an envelope with a spatula. Immediately turn the envelope over and quickly fry the other side.

We transfer the finished pancake to a plate, pour over condensed milk and enjoy, while it is warm, the same taste of pancakes from Thailand.

By implementing these recipes, you will surely plunge into memories and enjoy the very taste of Thai pancakes with banana.

Thai pancakes with banana: recipe, cooking features and reviews

Thin pancakes with milk and thick yeast pancakes are familiar to every Russian person. But in Thailand, such pastries are prepared differently. All tourists who have once visited this eastern country will remember the delicious Thai pancakes with banana. The recipe for their preparation is presented in our article. We suggest preparing pancakes with different dough and filling options, including strawberries.

Thai pancakes: cooking features

Thai pancakes, or roti as they are called in Thailand, are a dish with Indian roots. This is what they call bread cakes in India. They bake, or rather, fry, roti with different types of filling. But foreign tourists especially liked Thai pancakes with banana. Reviews about them are admiring and enthusiastic. Even those who once disdained street food cannot resist roti, they are so delicious. Well, as direct proof of the positive reviews, there are huge queues in front of every mobile food truck in Thailand.

Thai pancakes are completely different from Russian pancakes. The differences are literally in everything:

  • the dough here is quite tough and incredibly elastic;
  • the pancake is not poured into the frying pan, but is stretched in your hands to the desired size;
  • a mandatory component is the filling;
  • the shape of the Thai pancake is not round, but square due to the fact that during the cooking process it is rolled into an envelope;
  • Roti is not baked, but fried in a frying pan with hot margarine or palm oil, which makes them crispy.

“Roti kluai” or Thai pancakes with banana: traditional recipe

In fact, no one knows what the original recipe for Thai pancakes looks like. In expensive restaurants, the dough for them is prepared on the basis of coconut milk and a special flour mixture, and in street Thai makashki on wheels it is prepared on the basis of butter and water. It is the second option that is familiar to Russian tourists, who upon arrival home immediately try to recreate it in their kitchen.

Using the recipe offered in mobile mini-cafes, we will prepare Thai pancakes with banana. The step-by-step recipe is as follows:

  1. Add salt and sugar (½ teaspoon each) to the butter melted in a water bath. Then flour (400 g) is sifted directly into the butter.
  2. Warm water (240 ml) is gradually poured into the dough. The dough is kneaded well for 10 minutes, covered with film (lid) and set aside for 45 minutes.
  3. After time, the dough is divided into 14 pieces (pancakes).
  4. The filling is prepared immediately before frying. To do this, beat 1 egg in a separate bowl and add sliced banana to it.
  5. To prepare pancakes, each piece is thinly rolled out or, rather, stretched with your hands. Then the pancake is placed in a frying pan with heated margarine and first fried on one side for 20 seconds, pour the filling into the center, fold the edges inward and turn it over to the other side for 40 seconds or until golden brown.

The finished pancake is placed on a plate with paper, poured with condensed milk or chocolate topping.

Dough for Thai pancakes with green tea

Many Thais use green tea when preparing roti dough. It is added to flour (450 g) sifted with a pinch of salt and sugar (1 tablespoon). Along with tea (½ tbsp.), 60 ml of warm milk, liquid honey (1 tsp.) and olive oil (7 tbsp. spoons) are added to the dough. The kneaded dough should look like dumplings. Place it in a greased bowl and cover with a lid or film. Leave it in this state for 45 minutes.

The rested dough is divided into 16 parts (koloboks). Each ball of dough is rolled out thinly with an oiled rolling pin and transferred to a frying pan with a teaspoon of vegetable oil. Fry a little on one side, then pat ½ of a sliced banana into the center, fold the edges towards the center (like an envelope), turn over and fry on the other side. Thai pancakes with banana, the recipe for which with green tea is presented above, are served hot, after pouring them with condensed milk. From the specified amount of ingredients you get 16-18 pancakes.

Thai pancakes with condensed milk and banana

Another recipe for making Thai pancakes. Provided that the diameter of your frying pan is 30 cm, the specified amount of ingredients should yield one roti pancake, almost the same as in Thailand. If the frying pan is of small diameter, the dough can be divided into two parts and fry two pancakes.

Thai banana pancakes are prepared from the following dough: first from water (½ cup), condensed milk, melted butter and sugar (1 tablespoon each), as well as a pinch of salt, eggs and flour (2 cups of 200 ml each) the dough is kneaded. It should rest on the table under the film for half an hour, after which it is stretched into a thin, almost transparent pancake. It is placed in a frying pan with butter, condensed milk is poured on top, wrapped in an envelope and turned over. After this, the pancake is laid out on a paper towel, and then poured with condensed milk again.

After about an hour, it is divided into small balls the size of two tennis balls, stretched very thin with your hands and placed on a hot frying pan with oil. Coconut milk makes the dough very elastic, so the pancakes stretch well and do not tear.

    A few words about the country

    The Kingdom of Thailand is located in the southwest of the Indochina Peninsula. The name comes from the words “freedom” and “land”, that is, “the country of the Thais” or “the land of free people”.

    In addition to its unique natural beauty and delicious cuisine, Thailand is also known for its creative crafts: carved furniture, clothes made of the finest silk and cotton, boxes, ceramics, painted accessories, jewelry made of precious metals and stones.

    Thai cuisine

    The country is one of the largest exporters of rice. Corn, sweet potatoes, pineapples, bananas and coconuts are also grown here.

    Locals prefer rice with spices, seafood and vegetables over other meals. But tourists really like the sweets of Thailand. The most delicious dessert is universally recognized as delicious Thai pancakes with banana. The recipe for making them is quite simple: a sweet (there is also a salty option: chicken, shrimp) filling is wrapped in a sweet thin dough, fried in oil, and then honey, chocolate or condensed milk is poured on top.

    This dish came here from Malaysia. Since then, these pancakes have been prepared everywhere in Thailand: in cafes, on the beach, in the market.

    Dessert "Roti"

    According to historical information, “Roti” has Indian roots. Although from Malay this word is translated as “bread”. Often on the streets of Thailand you can hear the word “roti”, which is used to describe Thai pancakes. A little less often - “Pancake”.

    This dish is prepared by Indians, Malays and Thais themselves. Due to the fact that this happens right on the streets, pancakes are classified as street food.

    For baking, use corn or wheat flour, green tea, and/or coconut milk.

    Thai banana pancakes can simply be topped with chocolate, honey or condensed milk. Very often, a raw beaten chicken egg is added to a banana.

    The pancakes are rolled out very thin and cooked quickly. Therefore, the filling must be laid out as soon as possible and immediately, after folding the “envelope,” turn it over to fry on the other side.

    Since they are cooked in a frying pan, the size of the pancake should be slightly larger than the frying pan itself.

    Many Russian tourists coming from Thailand fall so in love with this delicate, sweet, elegant dessert that they begin to prepare it themselves at home.

    The recipes are quite simple. Ingredients you can use are regular wheat flour, cow's milk and water, olive oil, eggs, salt, sugar. And the filling is made from bananas and other fruits. It is recommended to fill the finished pancake with condensed milk, chocolate or syrup.

    Summary

    An interesting fact is that pancakes are not only an international dish, but also quite ancient. They began to prepare them much earlier than baking bread.

    And every year, in February or March (usually before Lent), International Pancake Day is celebrated. After all, not a single kitchen in the world can do without this delicacy, although they are prepared in different countries in their own way.

    In Russia, they are fried from liquid dough, flavored with delicious fillings: butter, caviar, honey, jam, sour cream. And in Europe and the USA, pancakes are prepared fluffy and tasty - with salty and sweet ingredients, consumed almost on a par with sandwiches and burgers.

    The biggest pancakes are among the Bulgarians, the most original are among the French. Well, the sweetest, richest in taste and subtlest are the Thais.

    Pancakes have always been a special dish for Russian people. This is both the personification of home comfort, gathering the whole family around the table, and a symbol of the spring sun at Maslenitsa, and, oddly enough, a word expressing dissatisfaction when circumstances do not allow the use of stronger phrases. Pancakes have always been considered an original Russian dish, and therefore, when we see its variations among other nations, we are always sincerely interested and compare.

    In Thailand they also make pancakes, although they are not at all similar to ours, but no less tasty. Roti is one of the famous Asian dishes, which is a serious gastronomic crime not to try. The birthplace of this culinary invention is India (translated from Sanskrit, roti means bread) and besides Thailand, it is prepared in many other Southeast Asian countries. However, the Thais, as always, introduced their own, completely unique changes, after which the seemingly ordinary dish became so tasty that sometimes you can’t even pull the eaters away from it by the ears.

    What are pancakes - roti?

    You've probably passed this dish a hundred times in a row, but you just didn't realize that they were pancakes. Indeed, in our understanding, damn it is something round. Ready-made rotis are more like fried pies - envelopes made of very thin dough.

    To try roti, look around and look for the nearest muffin shop that says Roti or Pancakes. It is usually hung with bunches of bananas, and nearby there is always a queue of salivating tourists and local residents, shifting from foot to foot with impatience. At a large round frying pan, sometimes you can meet real virtuosos and masters of their craft. They twist the dough in the air, stretching it into such a thin pancake that you can read a book through it. Such wizards always cook at least three roti at a time in a frying pan, and onlookers gather around, wanting to stare at the culinary juggler.

    There are many variations of fillings for Thai pancakes - meat, fruit, vegetable and with curry pastes. Sometimes there is something exotic that suits everyone – meat with berry jam or condensed milk. The classic version that can be found in Thailand on almost every corner is roti with bananas, “roti kluai”, topped with condensed milk and chocolate.

    Where to eat and how much does it cost?

    You can taste roti almost everywhere. This is such a popular dish that it is prepared both in street stalls and in restaurants. It is believed that in Thailand the tastiest pancakes are prepared on the border with Malaysia. Prices will depend on the level of the establishment and the filling. On the street, you can try a classic roti with banana for 30 baht, with egg for 25 baht, and with egg and banana for 40 baht. Additional topping in the form of fruit jams, honey, condensed milk or Nutella will add another 10-20 baht to the cost of the dish.

    Recipe

    Many tourists returning from Thailand begin to miss Thai cuisine and try to recreate their favorite dishes in their kitchen. And roti, of course, is no exception. The biggest difficulty in preparing this dish yourself is rolling out the dough into a thin pancake. Not everyone succeeds the first time, well, “Moscow was not built in a day.” The main thing is desire, and skill, it comes with experience.

    There are many recipes for roti, and every housewife always has her own secret, because cooking is the same creativity as music, dance, photography or painting... And although there are certain canons in it, it is not able to develop without improvisation. A true chef is always searching and ready to experiment; this is the only way masterpieces are born.

    We will present two recipes for classic Thai banana pancakes. The first one is more like a restaurant version of this dish, the second one is closer to the recipe from makashnitsa.

    Roti “like in a restaurant”

    Dough:

    Sift 500 grams of wheat flour and add salt and sugar (1 teaspoon each). Then add 1 beaten egg and 125 ml of milk. Start kneading the dough with your hands, and as you do so, carefully add 125 ml of water, little by little. You need to knead the dough very carefully and for at least 10 minutes until its consistency becomes homogeneous and elastic. The resulting mass is divided into two parts, wrapped in plastic and left in the refrigerator for an hour or two.

    Then the dough is kneaded again, divided into 12-14 balls and greased with palm oil. The blanks are again covered with polyethylene and allowed to rest in the refrigerator for 40 minutes.

    Filling:

    While the dough is proofing in the cold, you need to cut 15 -20 ripe bananas into rings.

    Preparation:

    Form the ball into a thin, almost transparent cake. For this purpose, you should not sprinkle the surface with flour as you would for dumplings. It is most convenient to use a silicone mat, generously lubricated with oil. If you use a rolling pin, then you need to oil it too.

    Heat some palm oil in a large frying pan. Carefully place the resulting flatbread in the pan and let it fry for 20 seconds. Then place the sliced bananas in the middle of the pancake. Wrap the edges of the cake in an envelope and turn it over to the other side. Fry for another 30-40 seconds until the roti turns golden brown.

    Place the finished dish on a plate lined with paper and allow excess oil to drain. Cut the pancake into portions with a large knife, pour with condensed milk or chocolate topping. If desired, you can sprinkle with powdered sugar.

    Roti “like in a makashnitsa”

    Dough:

    Melt butter (100 g) in a water bath, adding sugar (2 tsp) and salt (1/2 tsp). Sift 400 grams of flour into the butter and mix thoroughly. Kneading the resulting mass with your hands, slowly add warm water (about 250 ml) to it and continue kneading with your hands for at least 10 minutes.

    Roll the dough into a log, cover with plastic and leave to ripen in the refrigerator for about 40 minutes.

    Preparation:

    The chilled dough is divided into 10-12 balls and pancakes are rolled out of them. To prevent the dough from sticking to your hands, periodically wet them in cold water.

    The resulting flat cakes are placed in a heated frying pan, previously greased with palm (or olive) oil. Place bananas cut into rings in the center. The pancake is wrapped in an envelope and turned over. Once it turns golden, place the roti on paper and allow the excess oil to drain off. Then cut into pieces, pour over condensed milk or chocolate syrup and enjoy the taste of Thailand.
