Take a two-liter saucepan and pour all the chopped ingredients into it. Finely chop the potatoes and eggs and add them to the mixture.

Okroshka is an amazing dish! No matter how much you cook it, it is still eaten in one day. Moreover, as my family noticed, it’s not so important whether it’s hot or cold outside.

By the way, this cold soup has been known for a very long time and has undergone a huge number of changes in its composition. Therefore, everyone has their own traditional recipe.

Today we will prepare okroshka with kefir. Some may be surprised, but in fact, its sourness and thickness only add piquancy to the freshness of the vegetables. And, of course, I won’t ignore gourmets; a very unusual recipe with salmon has been prepared for them.

Meat and vegetables are taken as the basis, but everyone understands something different by these concepts. Some people use sausages as meat, while others use turkey.

Everything in okroshka can be considered dietary products except potatoes and sausage.

We will simply remove the tubers from the recipe and add the correct protein in the form of chicken (can be replaced with turkey). This is important both for those losing weight and for those building muscle.

To get more microelements and vitamins, do not skimp on greens; anything will do: dill, parsley, celery, onions and even cilantro.

In this recipe, kefir is diluted with mineral water. Of course, you don’t have to do this, but then you get a very thick consistency. And the bubbles in mineral water add an interesting note and taste.

Ingredients:

  • 2 eggs
  • 1 cucumber
  • 1 boiled chicken breast
  • Greenery
  • 2.5 l kefir
  • 100 ml mineral water

Boil the eggs for 10 minutes and the fillets for 30 minutes until done.

Finely chop all ingredients. To get more thickness, you can use a fork to separate the meat fibers.

Mix all the ingredients and pour in kefir and mineral water.

For those losing weight, salt is not added to this recipe, but you can replace it with natural salt in the mineral water itself, for example Essentuki No. 7.

You can also add a spoonful of horseradish or mustard for richness.

If you need a healthy snack rather than a protein one, then add celery or lettuce to the greens.

Classic recipe with sausage

Still, most of Russia prepares this dish with sausage. Everyone likes her. Of course, you can experiment and use several types of sausage. But still, the most popular recipe, also called classic, is made with doctor’s low-fat sausage.

By the way, this is one of the most affordable types of meat products. And you can often see a promotion or discount on it.

Ingredients;

  • 200 g boiled sausage
  • 5 potatoes
  • 4 fresh cucumbers
  • Dill and onion greens
  • 1 liter of kefir
  • 0.3 l boiled water
  • 1 clove of garlic
  • Salt pepper

Squeeze the garlic into kefir and dilute this mixture with water.

Grind all the ingredients and mix in one bowl or pan.

Pour the prepared filling into the soup.

Let's taste for salt. It happens that sausage gives its own flavor and no salt is required, but look at your taste,

And my grandmother did not cut potatoes, but mashed them. The result is a pleasant thickness that always settles in the spoon.

If you use this dish not as a soup, but as a drink, then you can add plain boiled water to the kefir to make it easier to drink.

Delicious recipe with mustard

My mother-in-law opened okroshka with mustard for me. Before seasoning the chopped ingredients, she dilutes a spoonful of mustard in a glass of mineral water. And then this mixture is poured into kefir or sour cream.

The taste is unusual, a little vigorous, but with sourness. By the way, the aroma does not come from mustard, but from all the ingredients, I didn’t even realize at first that mustard was present.

Ingredients:

  • Boiled veal – 0.2 kg
  • Boiled potatoes – 4 pcs.
  • Cucumber – 2 pcs.
  • Boiled eggs – 2 pcs
  • Radish – 150 g

To make the meat juicier, you need to put it in boiling water, then the closed pores will not allow the juice to leak out.

Chop potatoes, radishes, egg whites and cucumbers.

Place in a bowl and pour in kefir sauce.

You can serve the portion beautifully by placing the salad mixture in the center in a round shape. And pour the sauce around.

Okroshka on kefir with chicken

Chicken is an excellent substitute for sausage in many dishes. And she is often at hand. For example, when there is a desire to make several food options at once, then broth is boiled for soup, and the finished meat is used in salad or okroshka.

  • Eggs – 7 pcs.
  • Radish – 0.3 kg
  • Cucumbers – 0.3 kg

Prepare the cucumbers and add them to a common pan.

Chop the greens and add a spoonful of mustard and sour cream.

All this needs to be ground and placed in a common container.

Salt and add 0.5 tsp. citric acid, then fill the cold soup with kefir and water.

Not everyone likes citric acid, so it’s best to replace it with lemon juice.

Very tasty proven recipe with radishes and meat

We'll take beef. Take fresh, it tastes more tender and cooks faster.
You may have noticed that any meat product is greatly complemented by fresh vegetables. For example, as soon as the chicken salad starts to play, you should chop a cucumber and tomato with it.

Since okroshka is considered a spring dish, we often find radishes in its composition. We start eating this vegetable very first, because neither cucumbers nor tomatoes have yet had time to produce their first harvest in May, but okroshka with radishes is already ready.

So, let's start cooking.

Ingredients:

  • 1 liter of kefir
  • 200 g boiled meat
  • 200 g boiled potatoes
  • 200 g cucumbers
  • 200 g radish
  • 4 chicken eggs
  • Greenery
  • Salt pepper

Please note that we take all ingredients in the same proportions.

We wash the radishes well and cut off the butts.

Boil the meat until it becomes soft. It is better to take beef or veal.

We grind all the products.

But we don’t cut one cucumber, but grate it. This will release more juice and the soup itself will become thicker. I know that many eggs don’t cut all of them, and sometimes they leave one so that they can grate it later.

Look how much meat you have left that you can’t put in the potatoes. After all, okroshka is, first of all, a healthy and light dish; it is important to stop here in time and not oversaturate it with carbohydrates.

Unusual composition with salmon

I have never tried to eat salted fish with a fermented milk product. But in our Ural cafes and restaurants you can see this amazing combination on the menu. Surprisingly, the taste of fish okroshka is very delicate, and the smell of salmon is almost not noticeable.

Ingredients:

  • 150 g lightly salted salmon
  • 3 small cucumbers
  • 1 stalk of celery
  • 0.5 onions
  • 100 g greens
  • 1 potato tuber
  • 2 eggs
  • 150 ml kefir
  • 1 tsp mustard
  • 10 ml mineral water

Boil potatoes and eggs in advance. Cool them and start chopping them finely.

Try to remove the bones from the salmon. This is important, especially if there are children at the table.

Rinse the greens first under running water and dry on a towel. If you don’t want to cut with a knife, then ordinary kitchen scissors will cut the greens just as well.

Chop all the ingredients and mix them in one bowl.

Fill with kefir and mineral water. Then stir the mustard into the soup.

Advice for those who like to dilute kefir with mineral water - do not take the highly carbonated type, because your soup may foam; it is better to take a medium-carbonated one.

The question arises - how much mineral water to pour. There are no clear proportions here. If you don’t like the taste of kefir, then dilute them one to one.

I will be grateful for your comments, write what kind of okroshka you like and which recipe you like best!!!

  • Green onions – 1 bunch;
  • Salt - to taste;

We prepare some ingredients immediately before cooking. This simple process can take 15-20 minutes. What we need to do:

  1. Wash all vegetables in clean water and be sure to dry them. If it is a radish, then wipe it with paper napkins.
  2. Boil the potatoes in their jackets, cool and peel the skins.
  3. Boil eggs hard. After they are cooked, pour cold water over them and peel them.
  4. Making figured ice. Pour water into special forms and put them in the freezer for a short time. We use the resulting ice cubes at the very end of preparing kefir okroshka.

  1. Crumble boiled eggs and potatoes.
  2. Cut the ham into cubes.
  3. We also cut the cucumbers into small cubes. If the cucumbers are overripe or large, then cut off the peel.
  4. Wash all the greens needed for the dish in clean water, dry and finely chop.
  5. We transfer the slices into a special deep bowl or any other container that will accommodate the food.

Incorrect cooking technology can affect the taste of the finished dish. So that all your efforts are not in vain, to help every housewife we offer some simple tips for preparing kefir okroshka.

  1. It is necessary to choose kefir for crumbling that is not greasy or thick. Otherwise, it won’t turn out to be soup, but porridge. But if there is no other product available, then you can dilute the thick fermented milk product with mineral water (necessarily unsalted and non-carbonated).
  2. Some vegetables need to be soaked before cutting (this is especially important with radishes and cucumbers). The same goes for greenery.
    This simple procedure is necessary to ensure that the products:
  • “got rid of” nitrates;
  • became more elastic and acquired a fresh look.
  1. You should add kefir to the crumble last and only after seasoning. It can be played by a mixture of mustard and ground egg yolks, diluted with ground pepper, sour cream (or kefir) and sugar.
  2. Before serving, the summer dish should sit for 30 minutes. It is advisable not to violate the waiting hour. Because in an overcooked soup, the ingredients will separate, and in a soup that is not worthy, the vegetables will not be tasty due to the fact that they do not have time to soak in the dressing.

Okroshka with kefir, recipe step by step

First of all, to prepare okroshka with kefir, we need to boil the potatoes and eggs.

Cook these ingredients in two different pans. Eggs – 10 minutes from the moment of boiling. Then drain the boiling water from the pan and fill it with cold water to cool the eggs.

Cook the potatoes until fully cooked - about 30-35 minutes. We check the readiness of the potatoes by piercing a knife. Then remove the potatoes from the boiling water and leave to cool for 15 minutes.

After the potatoes and eggs have cooked and cooled, they should be peeled and cut into cubes. Place the ingredients in a suitable container - container or pan. And don’t forget that soon the eggs and potatoes will be joined by the rest of the components of kefir-based okroshka, so the dishes should be capacious enough.

We also cut the boiled sausage (or ham) into cubes and place them in a bowl with the rest of the ingredients.

Wash vegetables, namely cucumbers and radishes, thoroughly. Cut into cubes or small strips.

All ingredients except parsley are ready. Finely chop the washed sprigs of greenery and add to the bowl with the okroshka. Mix everything thoroughly.

Kefir should be added to okroshka right before serving, as well as salt. The thickness of okroshka on kefir is usually regulated independently, but for the amount of ingredients I indicated, it took me about 1.5 liters of kefir, and the okroshka on kefir was quite thick.

An ancient Russian dish satisfies hunger and refreshes on a hot summer day, and the body is filled with vitamins. Okroshka is prepared with kvass, mineral water and whey. But most often housewives use kefir as the basis of the dish. Prepare okroshka with kefir for lunch and please your family with a tasty and healthy first course.

Cook the following products in the required quantity:

  • eggs;
  • potatoes.

Buy boiled sausage or ham, fresh cucumbers, kefir, green onions and dill with parsley. If desired, add radishes to the okroshka. You can replace the sausage with meat, which you pre-cook.

Buy low-fat kefir. Fat kefir is thick, turn okroshka into porridge. But a product with a high fat content can be diluted with cold, mineral or boiled water. If you use meat instead of sausage, do not buy fatty beef or pork. For okroshka, prepare chicken breast, turkey or boiled tender veal. Rabbit meat will also work.

  • 200 g sour cream;
  • 150 g boiled tongue;
  • 2 potatoes and 2 eggs;

Do not cut all products for okroshka too coarsely. This will give the dish aroma and unsurpassed taste. Some housewives add fresh carrots, beets, and onions. These components give summer soup its unique taste.

An interesting option is fish with a sweetish taste in okroshka instead of meat or sausage. Suitable pike perch, tench, cod. Okroshka will also be delicious with smoked fish.

Soak vegetables in water before cooking. If the leaves of dill and parsley are a little wilted, after soaking they will become nice and tight. Water will also help remove nitrates from cucumbers and radishes.
