How to cook wheat cereal in water. Wheat porridge - the best recipes

11 months ago

Wheat porridge is not as popular as oatmeal, buckwheat or rice. Most people consider wheat not the most healthy product, having become accustomed to the fact that it is used exclusively for bread, which, as you know, is the main enemy of the figure. However, it can bring a lot of benefits to the body if it is cooked according to all the rules, because the cereal itself is a slow carbohydrate, unlike flour, which has gone through many stages of purification. So how do you cook wheat cereal?

Millet porridge in a ceramic pot on the wooden table

Despite the fact that wheat is considered an ideal cereal for those with a sweet tooth, since it goes well with condensed milk, jam, honey, jams and confitures, it generally has a universal taste, so it can be boiled in meat or vegetable broth, served with fish, seafood, mushrooms. However, to master the process of working with wheat cereal, you need to learn how to cook it in water. And the basic method is in a saucepan:

  1. Before starting work, rinse thoroughly and sort the cereal, getting rid of debris.
  2. Boil water in a thick-walled saucepan based on a 2:1 ratio.
  3. Salt it, add prepared wheat cereal.
  4. Reduce the heat to medium; after a couple of minutes, remove the foam that appears on the surface with a slotted spoon.
  5. Cover the pan with a lid and cook the porridge for 20 minutes.

During cooking, be sure to stir the cereal periodically so that it does not start to burn. If you want stewed porridge, you should reduce the heat to minimum, but in this case the cooking time will increase to half an hour. Often, at the specified ratio of water and cereal, cooking is carried out until the liquid evaporates. However, be sure to check it by biting the grain after the specified time has elapsed: if it is soft, the stove can be turned off. Transfer the warm pan to a 100 degree oven (turned off) and let sit there for another half hour.

For small children, very soft, viscous porridges are often cooked, which can be additionally quickly ground in a blender to obtain a puree-like mass that is as easily digested by the baby’s body as possible. Their main difference from “porridges for adults” is that they are prepared with milk and take a little longer. The process might look like this:

  1. Sort and rinse the wheat grains, add water 1:1.
  2. In a thick-walled saucepan with a lid, bring everything to a boil, skim off the foam with a slotted spoon.
  3. Reduce the heat to low and simmer, covered, until the liquid has evaporated. The porridge should be stirred periodically with a wooden spoon.
  4. Add the same amount of milk, preheated to 40-45 degrees. Cook over low heat until it has completely evaporated. Add butter if necessary.

How long does it take to cook wheat porridge this way? In total, the process takes 35-40 minutes. After the liquid has completely disappeared, the pan with the porridge is placed in a warm oven for half an hour so that it finally cooks and becomes more viscous. If desired, sugar, honey, and dried fruits are added here at the end of cooking: they will steam well while the dish simmers in the oven.

Some housewives prefer to work exclusively with a multicooker, since thanks to it they do not have to monitor the stove and control the cooking process. This is especially true for porridges made with milk, in which the liquid tends to escape. There is no particular difference in cooking time between a multicooker and a stove; even the porridge will steep for the same amount of time as in an oven - half an hour with the lid down. General operating algorithm:

After the multicooker finishes working, do not lift the lid for another half hour: let the porridge brew. If desired, you can add butter to the porridge 5-7 minutes before the end of the program. And if you don’t want to steep the dish for a long time, just select the “Warming” mode and wait 10 minutes: after that the porridge will definitely be soft.

You can cook wheat cereal faster (the time will definitely be reduced by 5-10 minutes) if you soak it for 1.5-2 hours in cold water before starting work.

The fastest way to cook any porridge is in the microwave, although it is not the healthiest. To do this, you need to pour wheat grains with water in a ratio of 1:2, add salt and cook at 700 W for 3 minutes. After stirring, leave for another 3 minutes. Repeat this step (stir and turn on) several times, the total cooking time will be 10 minutes. If necessary, you can add hot boiled water.

Bring to the boil again and simmer until the water has completely evaporated (about 20-30 minutes). The pan should be covered with a lid throughout the cooking time and the porridge should simmer. Use the smallest fire, I have a gas stove and the fourth outermost burner is the smallest, so I simmer the porridge on it. If you cook porridge over high heat, it will stick to the walls of the pan and will not cook properly.

The proportions of water to wheat cereal are as follows:

  • 1:2 to get crumbly porridge;
  • 1:3 to cook viscous porridge;
  • 1:4 to prepare liquid porridge, the ratio of water to cereal can be increased a little more, we also want to note that liquid millet porridge will taste better if half of the water is replaced with milk.

After all the water has evaporated, remove the pan from the heat and add the butter. The law “you can’t spoil porridge with butter” applies here, so for 1 glass of cereal, 50 g of butter is the optimal amount. Of course, you can use less oil, especially if you are on a diet, but porridge still tastes better with oil.

  2. Choose a saucepan with the expectation that after cooking the porridge will be 2.5 times larger than the cereal;
  3. Pour cold water into the pan with the washed cereal. You need about twice as much water as cereal;
  4. Stirring constantly, bring the water to a boil. You need to stir the porridge using upward movements, carefully lifting it from the bottom to the surface. If the foam does appear, it must be removed;
  5. Add salt to taste;
  6. Reduce heat and simmer uncovered for 15-20 minutes;
  7. When the cereal has already boiled sufficiently, you need to remove the pan from the stove and leave it under a closed lid for about half an hour. It is better to cover the pan with a towel. Under the lid, all remaining moisture will be absorbed, the cereal will swell and become crumbly.

  3. After the porridge is ready, grind it with a blender or grind it through a sieve to obtain a uniform consistency;
  4. To make your baby like the dish, you can add fruit puree to it, which will act as a natural sweetener. Apples, pears, and bananas go well with wheat porridge. If the child does not suffer from allergies, then honey will be a good addition.
